In Japan, ramen chefs do not like to be referred to as chefs - they are a special group, just like ramen itself is a special dish. The apparent simplicity of Japan's most popular dish makes it difficult to simply call it "noodle soup," given its true complexity.

About Iggy

Iggy Kuznetsov, chef and ramen pioneer, brings his passion for this special dish to Bolzano. In the 700-year-old "Stube" of Parkhotel Mondschein, he will serve exquisite ramen creations during his 1 month pop-up restaurant in the fall, combining regional food diversity with Japanese cooking techniques.

After closing his restaurant "Noble Savage" in Vienna in 2022, he spent most of his time in Japan, where he deepened his knowledge of ramen while enjoying the local cuisine. Ramen is not only a warming and nutritious dish for him, but also an ideal stage to showcase the diversity of regional products.

For Iggy, this pop-up event is more than just a culinary experience, it is a tribute to his second home and a declaration of love for South Tyrolean cuisine.
