Dispensa is the first independent, Italian, biannual bookazine by Martina Liverani, which has been telling stories about food, ingredients, and foodstuffs, as well as the people behind them since 2013. 'Dispensa' in Italian refers to the space or cupboard where food is stored. The publication is printed on paper made from food waste and is intended as a collector's item: each issue can be revisited, delving into the amazing images and stories repeatedly. Each edition focuses on a specific theme, shedding light on it through inspiring narratives and portraits from various original perspectives. In a fast-paced, digitized world, Dispensa is an ambitious publishing project that emphasizes aesthetics and depth.
Livia De Giovanni from Faenza has been a chef for 30 years. For the past 19 years, she has been working for the Scottish tour operator Flavours Holidays, teaching English-speaking students the secrets of Italian cuisine in courses held in Emilia Romagna, Tuscany, or Umbria. In 2013, she co-founded the highly successful English-language YouTube channel 'Pasta Grannies' with food writer Vicky Bennison, aiming to create a video encyclopedia of traditional, handmade pasta from all over Italy. Over the past ten years, 510 videos featuring pasta-making grandmothers from all regions of Italy have been uploaded online. The first edition of the Pasta Grannies book has sold over 300,000 copies. Livia is deeply passionate about researching and preserving ancient knowledge, craftsmanship, and traditions: 'Learning from our grandmothers is very important, especially for Martina and me - we are both very proud to come from Romagna, and therefore, Piadina is an extremely important dish for us.'
Chef Livia De Giovanni demonstrates how to prepare the perfect Piadina Romagnola in her Piadina workshop, bringing a touch of Romagna flair from her homeland to Bolzano. Following the workshop, Martina Liverani, founder of Dispensa, invites us to immerse ourselves in the exciting world of food and meals during an aperitif with a Piadina tasting in a relaxed atmosphere at our kiosk.
